I am Italian, and never heard about this custom before. I do however know that rooster-shaped pitchers are very popular in central Italy, and mostly manufactured in Deruta, a town near Perugia famous for its ceramic tiles and handicrafts. There is an old tale about a rooster who saved a village by alerting the sleeping folks about the enemy invaders. Maybe that 's where it comes from.
